You are adventurous and don’t mind trying and learning new things even in the kitchen, then this is something for you.
During our international student dinner at Evenstad campus, I was fascinated by the different meals and different ways of preparing them, they all looked simple yet so tasty, yummy couldn’t help but try every dish on the table.
I will like to share the ingredients and method of preparing one of my favorite (little mixture of African cuisine). Fried Cabbage with Rice and plantain, accompanied with any Fish of your choice (Plantatin is of the same species as banana, it can be eaten unripe and ripe, common in Africa, in Norway you can get it in Oslo, in the Asian shops).
Ingredients (Meal for three)
½ cabbage, two cups of rice, two plantains, ½ littre oil, Fish of your choice, two big carrots, broccoli, two big garlic, ½ ginger, six large fresh tomates, and onion., salt, chilli, green/yellow/red pepper.
Preparation Chop your cabbage, then part boil for about two minutes, after remove and squeeze water from it. Next peel your plantain, cut into three halves and boil for about 15 to 20 minutes, for ripe plantain. Boil rice too. Cut your fish to desired sizes, season with salt for about two minutes and fry in hot oil, till golden brown colour. Next blend your garlic and ginger, chop carrot, onion, broccoli, and tomatoes separately. Place a small quantity of oil (same oil you used for frying your fish) in a pot on the stove and heat for about two minutes then add chopped tomatoes, stir at intervals till its dry (no more water) then add squeezed cabbage, and everything else except for the rice, fish and plantain. Stir and leave it to blend for about five minutes, then remove and serve hot together with the rice, plantain and fish.
